Making bread by hand is a nice hobby to pick up. If you're interested at all, go ahead and by all means try making some without the machine. It's very calming to oversee the bread from start to finish. Baguettes are something to strive towards. The dough is very simple. It's just flour, water, yeast, and salt. The thing that will take a long time to get correct is the forming of the loaves, getting a nice crumb, and finding a way of baking that works for you.

Going to sleep with a bowl of poolish next to your bed and then waking up and seeing how it's changed to take on the beginnings of bread is one of my favorite things. I like how bubbly it looks and I like the smell.
