the way you learn to cook is by following recipes pretty closely for a while until you acquire all the skills required to just do it by feel. there are a certain number of skills you need to to learn (how to saute, stir fry, braise, how to properly use a knife etc etc) and once you're comfortable with those you can just make anything you want without a recipe.

i never use any recipes or measurements since im lazy, i just eyeball everything since i have a feel for it. different story with baking, you need exact measurements for that.
