We know that succubi were among the monsters in the former age that sometimes were able to break free of the god-instilled instincts to kill humans, learning to love them instead. Lilith was presumably one such succubus, but her aspirations became much grander than any such monster before her, desiring to change the world and end the conflict by making humans and monsters effectively a single species dependent on each other.

She also had the good fortune of already being the most powerful of all the succubi living at the time, which enabled her to start working toward her dream.

Whether she always loved humans or whether some specific event broke her free of the human-killing instinct is certainly something I'd like to know though.
