Knowledge is the greatest power, and everybody knows even the most ordinary little magician has knowledge at least three standard deviations above the mean amount for everybody else. And Marisa has so much knowledge that she has to borrow books from other magicians to expand it! I wouldn't worry about a professional like her.

This right here. Just as Mokou is still technically a human despite being immortal in a regenerative sense, achieving biological or even true immortality does not necessarily strip one of their humanity. The criteria for that is apparently fairly specific, and deals not with removing actual human need, but the loss of the appetites that derive from them, such as hunger.
