Looking at her wiki page, it seems that she has a surprisingly bright and frenetic personality, the kind of girl who wears her heart on her sleeve. So that smug look does fit her, I guess?

That's high heresy, Apple is universally loved for her all-around stellar personality. Her "muhhaaaaa~" is so iconic that the FKG/NND Cafe collaboration featured a cocktail based on her nosebleed (made with tomato juice, if memory serves), in case you really loved that one Yumei scene in Akai Ito.

She's also personally responsible for introducing a lot of great characters to the game, as her popularity more or less started a trend of fruit-based knights having yuri overtones (especially with Quince, who loves cute girls as much as her, and Firethorn, her own childhood friend, who while not a commercial fruit is closely related to apples).

I still think it's amazing that they took Apple's flower meaning and, instead of going with the obvious Eris-esque troublemaker, turned it into a girl who really lives to find the most beautiful.
