I'm not as confident regarding Koishi as I am about Yoshika, so no comment in regard to the first part.

Agreed, it was never stated specifically that she doesn't have a soul, but usually it could be assumed that corpses don't have souls.

It says "memories" which could imply thought, but not necessarily...

And she was composing poems, which is different. We'll never read those poems, or have a more detailed description of the scene, though. We don't really know if her behavior without talisman is any less "free" than when she is with the talisman, or if her behavior without talisman appears to be more capable of individual thought. It's all about individual interpretation, really.
