Being able to compose songs without a singer is a benefit of Vocaloid even if the song could be done otherwise. And even if the song can be easily sang by a human, having a vocaloid sing adds to the roleplaying factor, some songs would be kinda embarrassing or weird for a regular band to sing. It allows for a lot of experimentation.

That said, voice synth have a lot of flexibility and technical skill that goes beyond singing fast or parallel singing, they can follow extremely complex sheet music that you won't see many singers capable of performing so they'll usually simplify the performance, the fact that you can easily swap singers and tune them mean you can find the perfect voice for each song - and you can have duets and choirs easily, and many genres embrace the artificiality of the synth like electronic.
