I'd recommend you give Tsukihime a go before Fate/Stay Night. It's a shorter VN that came before F/SN. It gives you a general idea of how Nasu writes his VNs. After you finish up Tsukihime, THEN enjoy Fate/Stay Night. Unlike the anime, it has 3 routes. The first route you do is Fate, in which Saber is the main heroine. After that, you unlock Unlimited Blade Works, which focuses on Tohsaka. And then after UBW, you get Heaven's Feel, a route about cooking and Sakura.

After that, go read Fate/Zero or something. Kara no Kyoukai is a lot like Tsukihime, so it really isn't necessary unless you take my suggestion and get interested in Tsukihime as well.
