And for the audio, one of the things that were very important to me is to passthrough surround sound without doing trickeries with multichannel AACs that surely can't be compatible with my 2005 DENON amplifier.

I realised DTS-HD is not directly compatible with DTS amplifiers. Bluray players will convert DTS-HD to DTS on the fly and, apparently, Handbrake does the same. In this setup, my amplifier, compatible with regular DTS but not DTS-HD, can play track 2 perfectly.

For the Stereo signal, I just used the Apple CoreAudio encoder at 256 Kbps because it is very good, but on Windows you might prefer to do FLAC instead and use a good AAC encoder later. By the way, AAC 256 Kbps = MP3 320 Kbps, or even better.
