I get what you're saying, but it might also have something to do with how humanoid they are. A lot of artists seem to not even attempt depicting sex between a man and a monster girl with a notably non-human lower body, perhaps explaining why so little of ushi-oni's art is lewd. It might just be hard to draw, kind of like how kissing seems to be really hard for a lot of artists to draw.

On the topic of things that took a while to happen, I'm reminded of how despite getting the "rape train" nickname early on it was actually quite a long time before the ushi-oni got any good fan art that depicted her doing sexual things.
