You can. The moment you get hit you press X and that's about it, though as you bomb, your character focus by default for the duration of it. You can't regular bomb while unfocused UNLESS you choose to do so in the options menu.The only real exception is the 4th game, if you have barriers, you cannot deathbomb, however to compensate, if you deathbomb while not having barriers it'll save you AND replenish your HP fully, meaning on Unreal without upgrades you can always get hit 2 twice and, if you deathbomb, you can get hit an additional 2 times.
