I'd say Remy was of Anglo-Norman descent.
She's clearly western, and in FS can at least write in English. (Whether or not she can write in Japanese, and was just flexing on Kosuzu is another matter)
English was never the language of the nobility, by the time that English had become the dominant global language the aristocracy had long since ceased to be.
This can be explained by Remy simply picking it up, but it would make more sense for it to be her native language, perhaps supplemented by French and Latin, as was common a few hundred years ago, as Remy doesn't seem the type to have the patience to learn a language generally regarded as more lower class than french would be.
Also, the spelling of scarlet that's agreed upon is English, not french. Escarlette would be french, and even through going through the japanizing filter, that would still preserve the intial E. Hence, we can only assume that it never had an E in the first place. And the distinction of anglo-norman is both historically accurate, and would help explain where Gungir and Laevatinn came from. Perhaps they were family heirlooms from Scandinavia?
That's about as far as I'm willing to speculate, though.
