I think the impression we get from the VN of all the servants is a little warped, since we only see about like four servants including Yasu, but there's meant to be like multiple servants coming from the Fuckeruin House and there's meant to be like a pretty high turnover rate for them. The servants we see in Umineko are just the unlucky fuckers who happened to be on schedule that day, so along with like a pretty wide pool of servants and Genji and Kumasawa covering up Kanon/Shannon along with Krauss and Natsuhi probably not giving too much of a shit about the replaceable servants I don't think it's entirely unreasonable for them to just not come into contact with Kanon enough to the point that they'd put two and two together and figure out that it's a big conspiracy by their schizophrenic servant that they accidentally almost killed as a baby.
