Personally I thought it was much more mature of Shirou to not only hold strong to his sworn code of honor despite heavy opposition and many compelling arguments to question it, but also to dodge the bullet of temptation multiple times in Fate to reverse the passage of time or break universal rules in order to have what he wanted on a personal level.

He passes up the temptation to exploit the Grail when Kiritsugu promises him he'll be able to reverse the events of the fire that burned his home, displaying the wisdom to be able to spot honeyed lies and directly confront his survivor's guilt. He literally had to admit to himself that the people who died and the ones who were preserved to suffer for years was a tragedy that could not be undone no matter how much he might want it to be.

Saber had the exact same problem to overcome, and probably would not have, if it were not for Shirou and his circumstances to mirror hers and his actions to show her that you can't fix mistakes that have already been made, that you can't change tragedies that have already happened, and it's completely asinine and childish to deny it.

The OP is ruling out the events of HF, which includes the crest worm nonsense and the whole mana starvation that made it impossible for Sakura to use Rider effectively. That was just grandad Matou's shenanigans at work. Berserker put Ilya in pain no matter what.
