I like Remilia the most, and I like ZUN's Septette for the Dead Princess fine but I can't think of any particularly good arranges off the top of my head.

On the other side of the coin, I don't give a fuck about Eirin(seriously, one of the characters I'm most... indifferent about) but her theme has some great arranges.

I'd try to get myself hired at her mansion, and then see how that would turn out.
