I will assume you are playing ari red. So there will be 7doras on the table. If you dont have any doras in your hand and none of them are out on the table assume your opponents have it. It is just normal calculation.

How to read people hand
1) honitsu/chinitsu hand, kill yourself if you cant spot these, even a baby can do it
2) pon castle
-hold on to fanpai tiles to mid game
-discard tile that other people have discarded
-hand discard doesnt reek of pinfu/tanyao
3) pinfu/tanyao
-is the most common hand that you will face
-generally discard tiles from 3-6 range when they are near tenpai/mid game
-when you see them coming out of their hand assume they are in tenpai especially if you are up against people that know how to not call riichii
4) open tanyao/yakuhai pon
-if you have most of the doras in your hand, dont be scared of open tanyao or these shitty yakuhai hand & play aggressively

How to win in tenhou
1) get 1st or 2nd
2) dont deal in
3) win with fast hand and dont deal in during east
4) DONT DEAL IN

That is it. Just grind till you can play in the upper dan room.
