Dang I forgot to get Eirin Fumo, I know what you mean, I also get my meat from the butcher, generally from a friend who raises cows and will just happen to sell me some. Very delicious and safe for raw consumption, but the ground beef (still not that bad), but I usually just cook the most parts of the beef cuts regardless.
