Crafting with normal stones rolls on a pool of all craftable castles, which is actually a decent pool that ranges from 1 to 7 star units. It's just the rates are heavily skewed towards 1 and 2 star units.
Gold and Rainbow ores guarantee 5+ and 6+ respectively. You use them by going to the crafting screen and crafting with them, and that's it.
