A lot of those happen outside of F/SN though. The whole "irony" of the HGW was that most Servants who get summoned to it don't give a single fuck about the Holy Grail, or don't even have a specific wish they want granted. The irony becomes even more apparent when the only servant who cares about getting the Holy Grail is Saber, a corporeal non-servant who is still alive.

I'm not saying Servants are emotionless automatons who don't have any feelings. They've simply already gone through their character arc from life to death. We could keeping going in circles about this when we bring up material outside of F/SN, but I feel like that was Nasu's intention with servants when taking F/SN in isolation.
