yes this should be the meat of your immersion time and it's where you learn the most, just make sure you don't try to understand *everything* because some sentences will be just beyond your current skill level with no chance of getting it - so be ready to move on if you don't understand after looking everything up and trying for a minute or two
since constantly pausing can get very tiring, what i did early one was to have one series that i watch "intensively" as described with pausing and looking up, and one "burner" series that i would just leaving running, which i could watch while eating or once i was tired of pausing all the time
you definitely learn more when pausing and looking stuff up but there's also value in just letting a show running and taking in japanese at a natural speed
