Might as well start off with EoSD. IN and MOF are a lot easier, but that will give you habits to break later on when you play other games and can't rely on the same crutches those games give you. Start with EOSD because it's what the majority of fan works are about and it's definitely the defining game of the series. In fact, if there is only one Touhou you play, make it EOSD.

That being said however, PCB and IN are, in my opinion anyway, the most fun. My personal favorite is PCB because Yukari is my waifu. MOF has the best music. SA and UFO are extremely difficult, but SA's boss fight is probably the most fun in Touhou, at least once you get good enough to stop dying every few seconds. TD is kind of meh but the music is exceptional even by Touhou standards. DDC is good, somewhat hard, yet all but the first three bosses in it are boring and unpopular. The PC98 Touhous are good and people don't play them enough. The single best boss theme in Touhou might be Yuuka's in LLS. I can't say anything about the fighting games, because the only thing I enjoy about them is Reimu's thighs in HM.

Yukari is pretty much the most beautiful touhou.

She has long, flowing blonde hair, and non-brown eyes. She dresses in gorgeous dresses and carries a parasol. She is the apple of many people's eye.

BUT, as wonderful and scintillating as Yukari is, if she was a real woman, would she be considered beautiful?

Long hair I guess is not really generally considered something to be amazed over. She has the features of an older lady but you always see older women dressing like bikers or rather sloppily, definitely not in a long flowing dress. A woman who carries a parasol? That's kind of weird and many guys would think shes some creepy cat lady for keeping a pet cat AND fox.

So if your favorite touhous were converted into their real-world counterparts, would the be considered attractive to the general public?

Or just turn this into a Yukari thread
