Remilia's is fun to me because it's just rapid but simple. It's challenging, but not a pain in the ass.
Kanako... I dunno. Maybe it's because Virtue of the Wind God is her only really hard spellcard, I'm always gunning just to take her out ASAP. The attacks while she's immune aren't really hard or fun or appealing to the eye, unlike a constant volley of blood-spheres or whatever those bullets are supposed to be. Kanako just seems to be deliberately wasting your time.
Furthermore, why is she immune? She just gets kinda darker than usual. Remilia turns into a bat, so at least something's clearly different about it. It doesn't really seem like Kanako's using a special attack; just going "haha, you can't hit me, and by the way dodge these boring green vertical columns." Remilia on the other hand, is clearly trying to own your bloomer-clad ass.
When Remilia goes shot gun on you, you can really show off to your non-Touhou-playing friends inb4 get out of /jp/ and have them in awe of your awesome bullet-dodging skills.
