Older Rika is fine, that's when she's supposed to have mastered her powers. I remember finishing the DEEN anime and wanting a sequel with adult Rika as prota now that she was a full fledged time-traveling Witch.

I always wanted a Higurashi sequel more in line with the Kinotsukushi-hen ending from the ps2, in which Rika & Hanyuu fight Takano stopping time.
That's a route the series could have taken.
Introduce other reincarnations and deities and some plot about stopping someone from reviving an ancient evil.
Have Rika do the rewinds without killing herself, or introduce a new writing gimmick.
