Love? Wouldn't go that far. But like? Quite a lot.

Let's see. Got a good design, fancy and intricate without being over-designed. Her outfit and getup looks fancy and strange, with lots of little bits and pieces, but none of them really stand out over the others and it still looks like something someone would actually wear. That's pretty difficult to do.
Her personality is a real winner. Carefree but calculating, mysterious but simple, always unpredictable but always controlled, sometimes. Has a lot of layers, and you're never sure which one you're on. Would be a pain to deal with in real life, but we don't have to worry about that, so instead she's tons of fun.
Powers are fun, powerful, versatile, and thought-provoking, without being some hard to understand mess.
She's a really, really versatile character in terms of fanon. Can fit her in to just about anything, as anything, and she'll probably do pretty well. That's a tough thing to do without being some recurring gag character.
That versatility extends to porn too. Femdom with some (un)lucky outsider, vanilla with some unlikely human, yuri with most of the cast, non-con with some beast from her gap or other enemy. I'm especially a fan of that last one, gotta say, she's very much the sort that is satisfying to see get knocked down a peg.
And though I always forget that this is a thing, there's even Lolikari if you're in to that. Can any other Touhou fill both the loli and mature woman category? Can't think of any. MAYBE Suwako?

All in all, I like a lot about Yukari. She's not a favorite, not by any stretch, but still high up there. Reminds me a lot of Reimu; a character who's just really great all around and generally more than the sum of her parts. Can see why they have such high compatibility, though I'd still rank the miko above her in most cases.
