I've never understood it as well.
Even though I love Miku who doesn't have canon personality, I still have fallen in love with Miku as shown in some particular songs and my interpretation of her wasn't created by me. It's stil arguable that I might choose songs to fit my taste, but it's not really the case because I've been listening to her way before I ever thought 2D girl will be my partner for the rest of my life. I've never inserted some perfect girlfriend personality into Miku to make myself fall in love with her, it just happened naturally as I was listening to various songs and subconsciously formed one interpretation that felt "right".
People with OC waifus are weird and rare anyway.
