While not quite the same thing, mersharks as a species seem to have been psychologically effected by what they were in the previous era.

If you're in the MGE then anthropomorphosis is a fairly easy spell for monsters to learn. How good they are with it varies (i.e. some can't get rid of all their monstrous features), but getting usable legs is quite doable. Learning to use them properly can take some time though.

Mermaid type monsters can also learn to use their mana to levitate a short distance off the ground and move about that way.

The setting info addresses that. Namely the wildlife recognizes monsters and incubi as dangerous, superior beings, and won't attack them (they will still defend themselves though, so it's not like there's no danger).

And even if this innate recognition doesn't apply to parasites, healing magic and the durable nature of incubus and monster bodies would offer some protection.

I always assumed they interacted with materials normally unless what they struck was flesh.

For instance, mershark teeth are noted to have the same properties as mamono realm silver, but that doesn't stop them from chewing through ship hulls.

Plus you know monsters would love to strip a man with their blades.

Though back on the mershark, in order to chew food they must be able to turn off the "doesn't damage flesh" effect (unless said effect is only for human flesh).

So you mean how they deal with a redeemable human who has blood on their hands? Well, given that monsters were once killers of humans that exceeded any murderer in history, they have good reason to be quite big fans of redemption.

Some like mersharks even seem to have a complex concerning how their ancestors (and old individuals) behaved, being unusually passionate about helping people thanks to how they used to exist only to kill.

Well that's all the more confusing. KC's mermaids have long had a "crease" that gives the slight impression of thighs, but the knee aspect was downplayed (like with the vanilla mermaid's remake) or nonexistent (like with the mershark).

What's more some of this art looks like it could have been drawn by KC, or Will Saga has gotten even better at imitating his style. I have trouble telling...

If they do it may not be an innate feature but one they have to learn how to use. As far as we know the only innate special abilities sea incubi gain are the following:

1. Can breathe underwater
2. Can see as well underwater as on land
3. Can talk underwater

Personally, I would find it cute if many sea incubi remain pretty slow swimmers (i.e. normal human swimming speed). It would mean they would have to cling to or be carried by their wife whenever they wanted to swim somewhere fast.

The person's heart seems to be a important thing. If they believe they are doing good, that monsters are evil and out to ruin humanity, etc. then monsters tend to be more sympathetic.

It probably also matters whether or not someone succeeds at a heinous crime. If they fail, a monster stops them, etc. then they might be redeemed more easily.

Being descendants of creatures who themselves committed acts of mass genocide (indeed some alive today may have commited the acts themselves), one might say monsters also have a additional reason to be more forgiving (even if monsters had the excuse of limited free will back then thanks to their instinct to kill humans).
