There used to be a way to see total number of channels subscribed to, but they are constantly changing the interface, so I'm not sure if it's still there. It seems what you are doing is picrel, but this is limited to 1,000 subscriptions, so it wouldn't work for us. You can test this by manually removing subscriptions and seeing that the "Show 991 more" does not change.
What you want to do is go to your subscriptions manager. From the desktop UI, click on the subscriptions on the left bar (it should be like the third item down from the top). Then, on the top right you should see a blue "Manage" link, which will take you to a page with all your subscriptions listed, like here >>44372908 but longer.
Since the total number is no longer visible, I exported the text to Excel, and every fourth row is going to be a channel. So you can divide by 4 to get your total number of subscriptions. And you can delete the excess rows to get a list of every channel you are subscribed to. There's probably a better way, but this worked for me and only took 5 minutes.
