A large and important part of Yuyuko's character is "simply not caring" or "caring, but not acting like it". Food comes up a lot because she's often talking about food. Holding conversation with her is difficult because she frequently changes the subject, she feigns ditziness very often, and she's awful childish/selfish plain and simple.

I'd actually say that Yuyuko is OFTEN portrayed fairly correctly outside of canon. Even if they don't necessarily understand her, Yuyuko is outwardly a goofball who secretly knows exactly what is going on at all times, and that isn't hard to get right. Also she's into food.

The single most misrepresented characterS in Touhou are Marisa and Shiki Eiki. Marisa is portrayed as a ladykiller lesbian for... some reason. Eiki is portrayed as a tiny and high strung brat who nags everyone. Eiki is so fucking misrepresented it pisses me off. It's a good thing ZUN's never taken a bit of her fanon into her later appearances in the series, because holy shit, the fanbase too often reduces her to a joke despite her being a completely well-meaning, intimidating, and yet extremely pleasant sort of person. The only reason the residents of Gensokyo are aggravated by her is that she tells them the truth, and wants what's best for them. In fanon, she's a short breast-envious cunt. She's even tall in canon. THAT'S bs. The only thing often misrepresented for Yuyuko is how old she should look, and even in canon she doesn't often look teenaged.

I don't know why you say this when "a" or "the"--either one are NOT things in Japanese. They don't have a separation between proper or not proper nouns. The title being solely given to the current Judge of Paradise (literally what Yamaxanadu means) would lend more to saying that indeed, a more appropriate translation on the few times Eiki is titled or mentioned with Yamaxanadu, it'd be best to use "The" since at the time, she is indeed THE one, at least as far as English is concerned.

I also don't know why you keep saying she's not referred to as enma because

Run a ctrl+f for 閻魔 (閻魔様 to be exact). She's called Enma-sama by Reisen, Youmu, and Aya. Again maybe there's some other reading but I don't see one. Her species is also "Enma", though we know very technically she is an ascended Jizou.

So basically
*Referred to as Lord Enma/Lady Enma
*Official title is Yamaxanadu (Judge of Paradise (Yama -> Judge, Xanadu -> Gensokyo))

So basically what are you on about. Again, sure, none of these characters are saying outright she is THE one and only forever Enma, but considering she is honored with -sama by literally everyone, she is Gensokyo's judge (the only one, right now) and so on, an accurate translation would absolutely be "The Enma". To my knowledge, the only character who doesn't call her this is Komachi, who calls her Shiki-sama.

It's right and wrong, not good and evil ("good" here is meant as "ideal"). They judge by nature, not morality.

So again, it's not wrong for youkai to do what they do. There is nothing objectively different between a human child and a human adult, like how animals eat babies of other species because they're easier kills. Humans do this to. You'll also need to quote, since I still don't remember what you mean by PCB.

RE: they're satisfied with their situation. They are. They don't complain because they don't want to. Read the SoPM discussions. Miko wants to lead humanity in Gensokyo into a new age, but everyone agrees they wouldn't actually want that. Furthermore pretty much all of them are aware of the outside world situation, yet very few kick up a fuss about the discrepancy in lifestyle and treatment.
