The whole tipping system is ridiculous. They charge ridiculous prices for food (huge profit margin), and on top of that they somehow demand us to voluntarily donate money to people normally doing their work. This even goes the point where as >>9711882 and >>9711870 described you are somehow in the wrong for refusing to voluntarily donate extra money on top of the ridiculous costs you're already paying. Then the wage of the waiters/delivery people are adjusted to take into account they will get tips, receiving less than minimum wage by default and getting fired if they don't get enough tips to make up the difference.
