"better camera" really just gives you more control when taking pictures, not necessarily better pictures
the main thing I've found that helps get "better than real" photos is lighting
sunlight is nice because it's more or less pure white (or more like, what we evolved to consider "white")
but it's a single directional source, so on a clear day you can get some pretty harsh shadows
you really want to use at least two lights from different angles (and play around with the angles for a given shot until you're happy, pic related)
outdoors you want to use something to reflect some of the sunlight back at the subject at a different angle, like a piece of white cardstock even (since it's a doll and smol)
oh and the other thing is holding the camera as still as possible, which can be especially hard for phone cameras
maybe look into a cheap, small phone tripod (or even monopod)

in two hours today I managed to swap some parts, change her outfit, ans snap a handful of photos
but that was it for this entire week
