Personally I would start somewhere between Embodiment of Scarlet Devil, Imperishable Night, and Ten Desires. Each has something that could train you a bit better than the others,

EoSD teaches you to 'feel' the character hitbox as it doesn't have a nice particle to impress it upon you like there will be in the later ones. This is also counter-intuitive though as its the only one in the series to not feature things llike a visible hitbox, item grab zone, etc.

Imperishable Night is pretty well-rounded, but I don't think it would be best as a newcomer as it teaches Death Bombing which isn't all that reliable outside of IN. With that bad habit aside, IN is (imo) the most well attuned for newbies in terms of difficulty (always play on at least normal).

Ten Desires is another good choice, though I think the difficulty ramps up a bit more in the later levels than in Imperishable Night. Doesn't promote Death Bombing too which is a bonus, just don't make it a point to play Youmu as her focused state is completely unique onto itself. Play any of the others for a more traditional feel.
