You do realize that there are canon half-youkai, half-humans in Gensokyo? And other Touhous being the descendents of magical beings and youkai? And that Japanese folklore has youkai-marriages and pregnancies?
Your common sense is meaningless in Gensokyo, especially since it's a place backed by folklore and belief, not logic. If that's what happens in stories, that's what happens in people's beliefs and in Gensokyo.

Plenty of Youkai aren't selfish, Kogasa literally takes care of children as a part-time job and likes being useful to humans because she never was in her past life.

Patchy uses logic and things go badly for her. She trys to use magic to improve her health but literally only does the opposite and made herself weak and poisoned by mercury. So much for strict scientific reasoning.
