Shoggoths served the OldOnes and were mimics, as they now mimic how the OldOnes had sexx by merging, but now they seek to serve Anons, so instead of sightless penguins they mimic the 'bait' most likely to bring in an Anon they can serve.
Which is why they now mimic the Maido uniform, I doubt they had frilly-apron skin back then.
