I wanna write a story about a Phantom getting into human cinema but it would be really boring to read so I won't. Let's instead talk about which MGs would respond well to being exposed to human media and which movies you'd watch with your waifu.

Assuming the existing body can't be regenerated, the soul would probably just make a new one once it gathered enough energy (just as ghosts do).

You see, a major difference of the undead in the current era is that their souls are profoundly bound to the physical world thanks to the way Hel has changed the mechanics of how undead work. This means that for the soul of an undead, the physical world is essentially their afterlife and thus they stay in the physical world regardless of what happens to whatever physical body they currently have.

Also, the plants aren't withered, since umbral monster realm plants grow just fine under the red moonlight and light of the ambient mana in the air.
