Well, the three classes that HAVE to be summoned into the Grail War are the three Knight Classes: Archer, Lancer and Saber.

Everything else is pretty much up for grabs actually. So you could have a Brawler Servant or a Defender servant etc.

Also, my Saber. All of you are fucked.

I mean, this guy would hand Saber her ass while snorting at the idea of honor, give Lancer the fight he craves, take out all of Berserker's lives, ram Caster with Dragonslayer, charge into Gil while he's egoing, slice Rider in half, and . . . probably form an alliance with Archer.
