Eggs are great because you get to incubate the egg together with her and share in the responsibility of taking care of it. Its a great way to create a bond with the child before it's even born!

Could be any one of those things. They also might just really like the way the character looks and want their child to look as close to them as possible. It doesn't really bother me much.

But Okuu's case is a little unique. She was "originally just a bird" as mentioned by ZUN, a hell raven without an anthropomorphic form or any power to speak of. So she very well may actually have been born from an egg and have (or had) bird parents.
