After experiencing monstrous pleasure and thinking about the pros and cons a lot, she decides to go for monsterization. However, she doesn't want to simply be monsterized, and instead uses Druella's gift (The Sword of Truth) to create the various monsterization illusions Eristia experiences over the course of the game, so she can try out different monsters and she what she wants to become. As far as I know last we hear of her is a journal entry where she notes she has decided on what to become, and that she will be leaving the ruins to travel afterward.
