I tend to prefer the headcanon where Sariel is pretty arrogant and unsociable, but secretly being quite nice and gentle internally, showing that side of herself only to a handful of people. Arrogant, but not in an annoying or rude way. More like a benevolent Goddess who knows how important she is.
Sacchan being a somewhat unapproachable and distant due to her superior status does make sense. Her mere presence probably causes the lesser sisters like Mai, Yuki or Sara to be on their best behaviour. Her interactions with Yumeko are likely less domineering, but still formal and professional with a clear superior-subordinate dynamic. Louise is one of the few people to interact with Sacchan on an almost equal level, while Elis is the only sister who can get truly casual around Sacchan and even tease or prank her sometimes. Shinki is of course an entirely different matter. Nothing causes Sacchan to drop her calm and cool demeanor more effectively than her mom asking her "what did you do at work today?".
