This sort of thing is why stories where she and normal unremarkable humans are rarely done on equal footing, you need actual porn logic/a shota to pull it off. Like the other anon said about fantasy, it's the scenarios we cobble up that puts Ran and the (let's be real he's a self insert) love interest together. Common tropes like Yukari getting involved and making him Ran's responsibility are believable given Gappy's character and allows a caretaker dynamic to turn to love, and then there's the tried and true estrus forcing her to lower her standards. Either it's an unavoidable circumstance pushing them together or our boy has something to hook her in. I remember a bit of writefagging about a guy running a noodle/tofu shop and Ran stopped in because he wouldn't stop watching her. Stuff like that where you have something to offer or catch her attention and have the chance of making a positive impression.

It makes sense for youkai. Ran's dialogue when you confess to her shows that she originally doesn't see you as an equal, your relationship is just a fling to her. For them, an emotional attachment is much harder to earn; a youkai resolving to love an ephemeral human means they're okay with the emotional pain of missing you long after your death.
