I think Lancer does a good job showing off Artoria's larger-than-life stature. You can look at her and see that she's The King even among Fate's extremely colorful cast. From the modern perspective, no ruler in human history, mythical or otherwise, became as legendary and famous as King Arthur, and this version of Artoria represents that. She's absolutely confident in her rule, seemingly unbeatable, and a paragon of virtue and chivalry, a divine king.
Her usual self, on the other hand, highlights her more human aspect. Less of a holy ruler you couldn't approach without bending the knee subconsciously, and more of a beautiful knight you want to stand with no matter what, never letting anything corrupt her perfect image. Still a king, but a far more human one.
