I agree that Yuyuko has an easy characterization to get plausibly correct, in that her outward affect is ditzy 80% of the time.
Fans really cling to the food thing, which is a result of her IN metaphors and that sake collection storyline in IaMP.
They slip up on the last part, which is that she's a poet hanging around in a graveyard of dead samurai poets and she has the intuition to solve incidents before Yukari or Suika can. Let alone slower protagonists like Reimu.

Marisa has brash dialogue and canon relationships with at least one girl per game. It's easy to place her at the center of a harem even if her canon persona is a midget intimidated by Rinnosuke.
One of my favorite bits from Symposium of Post-Mysticism that people forget is that she struck up a friendship with Yuugi and goes to visit.
That's the same conversation where they point out a method which could kill even Yukari via ego death.

I agree that Eiki is badly characterized and gets it way worse physically than Yuyuko. Her height is up there with Orin's tails (or what should be a lack of) and Mo-meme-ji's animal features she's not supposed to have. The fans just don't care, they want tiny angry Eiki.
What they don't understand about her preaching is that it's sourced from a single desire: to never be forced into damning a person to hell.
If they just kept that in mind, we'd see loving Eiki as a more common depiction.
