I don't know if you mean overall novel, light novel or visual novel so I'll go all three. Also, big fantasy fan so it will revolve around high fantasy/ might and magic stuff.

For novels it's hard to pick a favourite specifically, but my favorite writer has to be Tolkien. The world building, fleshed out details and consistency are simply unparalleled. I have also been slowly teaching myself elvish though there is a huge lack of resources.

For light novels it would have to be 魔技科の剣士と召喚魔王(バシレウス) by Mihara Mitsuki
It has the simplicity and silliness of an LN, references to all kinds of mythologies and religions and a bunch of cute girls and lewdness. Also, the main character is a young man with values that is not a complete pushover. I have all volumes on my bookcase next to me (pic related)

As for visual novel, I've played a lot I liked but one that has influenced me the most in many ways is Unionism Quartet by Clip Craft. Hard to explain the plot but it generally resonated with my chuunibyou in a good way and I liked it.
