The Germans had good k/d ratios against those during Battle of Britain. Hurricane and F4F wouldn't offer anything, but those early Spitfires weren't too much slower and turn better.
Both of those Germans are faster than the F6F on level, climb and dive. Both also roll better. 109 should turn better, but 190 would likely lose in slow speeds. With their centrally mounted guns they are also better armed. 109's light frame should be less bullet resistant on the other hand it has real armor around it's only fuel tanks. 190 has both frame and armors to eat beating.
They are clearly better, but in many situations not enough to turn the tide if enemy surprises them, holds altitude advantage or has better pilots. Of course fights don't always happen on the performance peak altitude with max energy. Maybe for similar reasons the Germans considered their 1944 fighters generally even against Mustangs.
