You can make orbs whenever now, the seeds/pills or whatever are in the medal shop now and the materials are farmable in free quests. And yeah, generally stack speed for who you want to go first in sabbath, usually someone that'll fuck over the enemy team (like fallen iko) or buff the rest of your team so the enemy team is ineffective. Most all other content can be attack orbs.
Matching elements isn't quite as important anymore since you can put elements on orbs, but might be a while before you get enough useful ones.

Old dresses are stat sticks. I'd only bother with Rs if you want the icon from max level or if it's one of the demon lords and you want to bring one along to build bond. SRs sometimes have decent stats. You really shouldn't have issues with yarn, just with quartz for skill levels.
