I would imagine it to be extremely peaceful.

She's probably the most easy-going Touhou of them all, so just to be with her would be really relaxing and feel nice.

I think an old fashioned date would fit Sakuya the most, something like a picnic at the park, visit a museum/theater or eat food at a restaurant(or homemade cooking).
Something that's relaxing.

It will probably feel like the time is standing still while you hang out with her.
