If there is Lancer, Archer and Gilgamesh, then why is there no Berserker or Assasin (not the True one, of course)? Hercules could be quite interesting "oversized and caring older brother"-route, and Assasin is just fabulous.

My memory may be fuzzy, but when I played F/SN, I remember that Ilya rarely left the Von Einzbern mansion. The few times she did, she targeted Shirou, either to talk to him or to attack him. The only times she engaged other masters and servants were when she stumbled across them on her way to Shirou, or when they hunted her down at the mansion. It's perfectly reasonable to assume that Rider would be able to engage Berserker in the forest surrounding the Von Einzbern mansion any time she wanted.
