They might just not want to show a new sprite for a preview. I'd say they might just not want to age him since he's already a genric "adult" and shouldn't be too old by 93, but Takano did get a new sprite.

In the main plot, there's a lot of talk about the monsters being like lies/distortions in the world, proof that the world they see isn't really the "truth", they even avoiding mentioning their names because it's like affirming their existence. This Umineko crossover event kind of ignored all that (although lots of early events also did it, which is part of what makes this Umineko part 2 event story feel like something that was written very early on in Mei). Basically, yeah, a lot of the plot is trying to find what is behind it all and it's generally assume there will be some kind of real person behind it.

As far as Takano goes, in part 1 of the main plot, she was just a shadow of herself in main Higurashi. She gets to do the Onigafuchi/Oyashiro infodump, goes on with her usual plans, but then her and the Mountain Dogs just get completely btfo by the Mei plot and she just ends with a bullet on her head in the Watanagashi night.

2nd chapter though, in a Saikoroshi-like world (not quite the same, but similar in rough lines), she was a genuinely helpful researcher tied to a bunch of secrets regarding Hinamizawa Syndrome (research continued in secret even after Hifumi supposedly succeeded in curing it) and plays the role of a supporting character without any evil plans going on. Irie turns out to not have his backstory development and was the actual mad scientist here.

In the 93 timeline she leads a foundation fighting against a "sleeping disease" pandemic that's spreading around the world, but then they suffer a terrorist attack, and when the cure was finally ready, everyone started seemingly dying everywhere.
