Context makes the bomb. Stoneforge Mystic was a crap rare until Scars was released. Had Stoneforge Mystic been printed in any set not in the same Standard environment as Scars of Mirrodin, it would have been fine. Same for Delver. There's nothing wrong with the card, it just doesn't fit in the current Standard metagame. While I heard loud complaints about the titans (as well as many other recent power creatures), I don't think I've ever heard of people quitting because of it. Things like titans were printed to be bombs. Stoneforge Mystic and Delver were ordinary cards that unexpectedly became bombs, not intentional balance fuckery.

As for being unable to get rid of them, that's just nonsense. You can counter it, (in the case of stuff that doesn't have CITP abilities like the titans do) bounce it (perhaps repeatedly), use a specific or non-specific permanent destruction instant/sorcery, make the opponent discard the card before he can cast it, etc. One of the most beautiful things about all of Magic is that even the most degenerate setups can still be broken through. (I've once lost a casual game where I had 2 billion 1/1 creatures, the ability to draw every card in my library, 2 billion life and the ability to give all of my creatures haste...simply because one of my opponents could bring a Massacre Wurm into play at instant speed, killing me by using my huge advantages against me. Even sick 'everything you control is indestructible and has shroud' scenario's with a Platinum Angel or Pariah's Shield can be broken through.) You may not be able to utilize the silver bullet easily enough to make such cards not a threat to you, but every single threat in Magic has some sort of solution.
