If you're doing the games, you'll either want to start with Embodiment of Scarlet Devil, since it's the "first", or Imperishable Night since a lot of people consider it's lower difficulties the most new-to-bullet-hell friendly. Either way, unless you're really good at figuring out how to emulate foreign operating systems you more than likely won't get to the games before EoSD, which is just as well since even ZUN has mostly ignored them aside from throwbacks or old fan favorite characters.

If you don't like the playstyle of bullet hell, there are also fighting games to try out, or if none of the games are fun then just don't worry about it. In my opinion, the main thing about Touhou is the music, which is fucking amazing. Grab the soundtracks and you'll have some good listening on that train ride. Go to the fanwork music from there, probably start with the flash animated stuff but otherwise go wild. If you've got a good feel for the music, it's pretty easy to learn the gorillions of characters as you'll have a song to put to the name and the hat.

To help you out, a basic rundown of Touhou is that there are a pair of girls, Reimu Hakurei and Marisa Kirisame, who live in a mostly peaceful feudal-era slice of Japan called Gensokyo, filled with folklore holdovers that the rest of the world forgot. Sometimes the denizens of Gensokyo get a little antsy and start trouble, like that time Spring got stolen, or when a big hole blew open in the earth, but in the end Reimu/Marisa always figure out exactly who to shoot with lasers and the problem is solved. Afterward, everyone has tea and new friends are made. It is universally adorable.
