And as was earlier noted, incubi adapt due to feeding on their wife's mana, and with this mana take on some traits she already has that help her live in a given environment. They don't simply adapt to whatever environment they are exposed to.

Of important note that I take from all this is that becoming an incubus is not a easy way to gain superhuman abilities in anything except sex, it just means that gaining those abilities becomes possible i.e. you'll have to put as much work in as anybody else who has had their level caps unlocked.
